So, I’ll admit, I’m not a huge fan of salads. I love ordering them in restaurants, but have never had much luck making them at home. They’re never… exciting enough.
Mark Bittman to the rescue! For those of you who don’t know him, he writes a fabulous blog and column for the New York Times based on foods that can be made on the fly. Earlier this week, he wrote an article called, 101 Simple Salads For the Season, which have given me SO many new ideas for salads.
So I made a big salad for dinner last night, largely based on what was already in my refrigerator. It included:
– Hangar steak (leftovers from an earlier meal
– Grilled asparagus
– Pan-sauted corn with paprika
– Chopped tomato
– sauted mushrooms
… all on a bed of baby spinach, accompanied by millet bread toast (my new favorite).
